Home is where the cake is.
Because I know it's harder to get the fluffy consistency of a normal cake, I found the perfect vegan option for a weekend treat. A very tasty cake, with a perfect consistency, made exclusively from plant based ingredients.
It goes great with a green tea or coffee, during a quiet autumn morning, or as an afternoon snack (for those who still want to follow the morning fruit rule 😉). With only 7 basic ingredients, which almost anyone has at home, you can create a quick and easy dessert.
Recipe
Vegan chocolate cake
Ingredients
- 500 g whole wheat flour
- 350 ml water
- 100 g raw whole sugar or any other sweetener you prefer
- 2 tbsp cocoa or carob powder
- 90 ml coconut oil or any other oil
- 1 tsp baking soda
- 10 g baking powder
- 1/3 tsp salt
- 1 tsp orange blossom essence or rum / almonds etc.
- 80 g raisins or dates, any other dehydrated fruit
- 50 g dark chocolate
Instructions
- Preheat the oven to 180 degrees Celsius.
- Sift the flour, together with the baking powder, baking soda, salt and cocoa through a thin strainer.
- Add the sugar and mix the composition.
- Then add the oil, essence and water little by little, until the dough becomes softer and easier to mix.
- Put the raisins and dark chocolate, mix again and add the composition in the baking tray, covered with baking paper, or lined with a little oil and flour.
- Bake at 180 degrees Celsius for 50 minutes.
